Scallions, ginger, and garlic: Scallions, ginger, and garlic are fresh vegetables; it's best to buy them as needed. Usually, you can wrap the ginger in plastic wrap or a plastic bag and put it in the refrigerator. Don't wrap scallions and garlic in plastic wrap or bags, otherwise they are prone to rot and sprout; it is fine to keep them at room temperature in a ventilated area.
Powdered seasonings: Salt, sugar, chicken essence, MSG, etc., should be protected from moisture. After each use, seal them and place them in a ventilated area. If there is slight moisture absorption and clumping, it will not affect consumption. Spices such as five-spice powder, pepper powder, thirteen-spice powder, and chili powder are very prone to mold and insects; these powdered seasonings should be stored in sealed containers away from moisture. If you buy a large amount, you can put in some desiccant. Sauce-type seasonings: Chili sauce, noodle sauce, soybean paste, peanut butter, ketchup, etc., contain a certain amount of salt and can be stored at room temperature for a short period. If storing for a longer time, the container should be sealed and refrigerated. Because these seasonings contain oil, keep them away from stoves and high temperatures to prevent the oil from turning rancid.
